Seasonal Philosophy

The Heart of Our Kitchen

At Kitchen & Menu, we believe the best dishes start with ingredients at their peak. Our menu is a living reflection of Christchurch's seasons, changing regularly to capture the freshest flavours.

Seasonal menus ensure peak flavour and nutrition. Christchurch's climate offers distinct seasonal produce, and our chefs visit local markets weekly to select the day's best.

"Every morning, our chefs select the day's best produce from local growers. This direct relationship means our menu evolves with the weather, the soil, and the season."

Christchurch Seasons

Four distinct seasons shape the Kitchen & Menu menu. Each brings its own produce, proteins, and preparations.

Spring

Spring brings tender greens, asparagus, and the first strawberries. Our menu lightens with fresh herbs and delicate proteins. Canterbury asparagus arrives first, followed by mint and chervil from local gardens.

Summer

Summer is abundant with tomatoes, stone fruit, and seafood. Dishes are vibrant and often served chilled or grilled. Local tomatoes and peaches appear alongside fresh seafood from Kaikoura.

Autumn

Autumn brings mushrooms, root vegetables, and game. Our menu becomes richer and more comforting. Wild mushrooms from the Port Hills add earthy depth to slow-cooked dishes.

Winter

Winter calls for slow-cooked meats, hearty greens, and citrus. Our kitchen focuses on warmth and depth of flavour. Slow-cooked lamb and North Canterbury citrus anchor the colder months.

Local Partnerships

Canterbury Growers

We work directly with a network of Canterbury farmers who share our commitment to quality and sustainability. These partnerships ensure we receive the freshest produce daily.

  • Port Hills Organics
  • Waimakariri Market Garden
  • Selwyn Heritage Orchard
  • Banks Peninsula Free Range

Coastal Catch

Our seafood comes from sustainable fisheries along the Canterbury coast, including Kaikoura. We prioritise species that are in season and abundant, from delicate white fish to rich crayfish.

Ingredient Spotlight

Three ingredients define the current season at Kitchen & Menu. Each is sourced locally and prepared with restraint.

Canterbury Asparagus

A spring favourite, our asparagus is harvested young and tender. We serve it simply grilled with lemon and olive oil to let its natural flavour shine.

Kaikoura Crayfish

Available in late summer, Kaikoura crayfish is a delicacy we feature in a refined bisque or simply poached with herbs.

Port Hills Mushrooms

In autumn, foraged mushrooms from the Port Hills add earthy depth to our risottos and meat dishes.

From Ingredient to Dish

The Creative Process

Our chefs begin with the ingredient, not the recipe. They taste, experiment, and build dishes that respect the ingredient's natural character.

  1. Select the best produce at the market
  2. Taste and test preparations in the kitchen
  3. Pair with complementary seasonal elements
  4. Refine the dish through service

A Seasonal Example

Take our spring lamb: sourced from a Canterbury farm, it's paired with fresh peas, mint, and a light jus. The dish changes as the season progresses.

A Word from Our Head Chef

"Cooking with the seasons isn't a trend; it's how we honour the land and the people who grow our food. Every dish tells a story of this place, this time."
